Scrambled Eggs with Caramalised Onions

and Cheesy Sausage Bits

Ingredients

2 eggs

3 tbsp milk

4 chicken cocktails

1 medium-sized onion

salt & pepper

Prep Work

Boil sausages, drain, slice thin'ish

Break eggs into a bowl + add milk

Lightly beat eggs and milk

Slice onion thinly

Making Dinner

Heat pan and coat thinly with oil

Fry onions till soft and golden around the edges

Add the beaten egg, scramble gently

Add sliced sausages

Cook until eggs are dry..but not too dry.

* tumble everything onto a large plate, grab a glass of orange juice

and plant yourself in front of the telly to watch Law & Order *

For yet another night when you're feeling somewhat less than

enthusiastic about cooking but would still like to have something

delicious and quick to prepare for dinner..give this a try..

Ingredients

A small can of sardines

6 slices of white bread

2 eggs (lightly beaten)

Some chopped onions & garlic

Some chopped red chillies

Salt & Pepper

Step 1

Prepare the Sardine Filling

Open the can of sardines,

separate sardines from the tomato sauce

Lightly fry onions & garlic till golden brown

Add the chopped chillies

Add the sardines, gently break it into small pieces

Add abt 1 tbsp of the tomato sauce

Fry sardines for about 5-6 mins

Season till just right

Fry for another 4-5 mins

Step 2

Assemble the Mini Sardine French Toast

Butter 2 pieces of white bread

Fill it with the sardine filling

Slice into 4 triangles

Dip into the beaten egg

Fry in a hot pan until golden brown on both sides

and you're hungry..

Try this :

Ingredients

1 onion - chopped
2 garlic cloves - chopped

1 can of Campbell's Cream of Chicken

300 ml hot water

1/2 cup cooked macaroni

How to
Fry onion & garlic until lightly golden brown

Add the Cream of Chicken, then add the hot water
Season with salt and pepper, simmer for 10 minutes
Add cooked macaroni, simmer for another 5 mins

* Serve in a soup bowl *
Yummy feel-good food !

Reheating Tips..

USING THE OVEN

(at least 45 mins before eating time)

1. Pre-heat oven for 10 mins @ 180c

2. Ensure that the minis are covered with aluminium foil paper

3. Place minis in the middle of the oven on a baking tray

4. Reheat in the oven for at least 30 mins.

USING THE MICROWAVE

1. Take the lasagne/shepherd's pie out of the mini aluminium foil container

2. Place in a microwaveable container (covered)

3. Reheat on high for 2 mins.

My life revolves around me being in the kitchen either cooking or baking or both. So when something goes seriously wrong with the electricity supply to my kitchen, I go absolutely craaaazyyyyyyy ! and that's exactly what happened over this weekend...*sigh* it was the 'kejap ada, kejap tak ada' game..I must have called TNB at least 1000x ! In the end..much to my dismay and a substantial dent to my account..the entire electrical cabling had to be changed !! so..for an entire Saturday..I was in the dark..literally..coz there was no electricity at the house. All orders had to be prepped & refrigerated at my sister's house (thank god that her house is just across the road ! hehe). Alhamdulillah, by 5.00 pm Saturday evening..everything was back to normal.

In the midst of the chaos, I managed to whip-up some personal favourites for two Intans :
